Preparation
- Start by taking a large pot and filling it with a good amount of water and salt to cook the rice.
- While waiting for it to cook, wash the zucchini and finely cube.
- In a medium sized pan, brown the garlic with the oil, add zucchini, salt and pepper, cook for 5 minutes.
- When the zucchini is cooked, remove garlic and set aside to cool.
- Clean the shellfish and place in a bowl, drizzle with oil, a few drops of tabasco, lemon zest salt and pepper.
- Transfer the prawns into a wide heated pan and toss well, simmer with lemon juice and cook until they take on some color.
- Once the rice is ready pour it into a large bowl, add zucchini and prawns and mix well before serving.
